Made throughout the Piedmont region and dating back to the Roman Empire, Toma Piemontese is one of Italy's oldest cheeses. Produced from pasteurized cow's milk and aged for a minimum of 60 days, this DOP cheese has a natural, rustic gray/brown rind that tends to accumulate surface moldsspots of yellow mold are actually indicative of a healthy cheeseand a pale yellow interior with small eye formations scattered throughout. Toma Piemontese's texture is smooth, rich and buttery and the flavor is sweet and mild yet full, with traces of flowers and hay.
